Watermelon gazpacho with tuna and pistachios
Preparation
Open the can of tuna and drain the oil. Remove the stems from the strawberries and slice or dice them.
 
Peel the pistachios. Clean the peppers by removing the seeds and cutting them into pieces. Peel the skin off the watermelon and also cut it into pieces. Peel the garlic.
 
Peel and cut the cucumber into pieces. Put all the chopped vegetables in a bowl along with 1 tablespoon of extra virgin olive oil, a little vinegar, and salt. Blend with a hand blender. Serve with the tuna, pistachios, strawberries, and some mint leaves.
Ingredients

800 g of watermelon, 1 spring onion, 100 g of strawberries, 1 clove of garlic, 1 red bell pepper, 1 green bell pepper, 1 cucumber, 1 tablespoon of extra virgin olive oil, sherry vinegar, 1 can of tuna in oil, salt, mint leaves, 60 g of pistachios.
