Melon and feta salad
Preparation

1. Cut the spring onion into small slices and soak it with a little vinegar and water so that it loses strength and does not repeat itself.

2. Peel and cut the melon into medium wedges (each slice into six pieces, for example). In a bowl, mix it with the parsley, the mint, half the almonds, the olives and the crumbled feta cheese with your hands.

3. Chop the rest of the almonds and mix them with salt, pepper, vinegar and oil. Mix the vinaigrette with the salad and serve immediately.

Ingredients

For 4 people


1/2 piel de sapo melon (if using a smaller variety, one or more)
100 grams of feta cheese
50 grams of raw almonds
A handful of black olives
1/2 spring onion
1 tablespoon parsley, chopped by hand
1 tablespoon chopped mint by hand
2 tablespoons of white wine vinegar plus a little more for the spring onion
4 tablespoons of extra virgin olive oil
Salt
Pepper
