Watermelon Cream with Scallop Skewers
Preparation
For the watermelon cream:
 
  • 500 g of watermelon, peeled and cut into chunks
  • Juice of 1 lemon
  • 1 tablespoon of honey (optional, according to preference)
  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)
 
For the scallop skewers:
 
  • 4 large scallops, cleaned and without coral
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Skewer sticks
Ingredients
 
Preparation of the watermelon cream:
 
Place the watermelon chunks in a food processor or blender.
Add the lemon juice and honey (if desired) to the watermelon.
Process until you obtain a smooth and homogeneous mixture.
Taste the cream and adjust the amount of honey, salt, and pepper according to your preference.
Transfer the cream to individual bowls or serving cups.
Refrigerate the cream until well chilled before serving.
 
Preparation of the scallop skewers:
 
Preheat a grill or skillet over medium-high heat.
Rinse the scallops and pat them dry with paper towels.
Season the scallops with salt, pepper, and a little olive oil.
Thread the scallops onto the skewer sticks, one per stick.
Cook the scallop skewers on the hot grill for approximately 2-3 minutes on each side, or until they are golden brown and fully cooked.
Remove the skewers from the grill and let them cool slightly.
 
Assembly:
 
Once the watermelon cream is well chilled, remove it from the refrigerator. Place a scallop skewer in each bowl of watermelon cream. Garnish with fresh mint leaves if desired. Serve immediately and enjoy this refreshing and flavorful watermelon cream with scallops.
